Biscotti is plural for biscotto. Originating from the Latin word biscoctus, meaning "twice-cooked" it characterised oven-baked goods that were baked twice, which made them very dry thereby making them non perishable and particularly useful during long journeys and wars. In modern Italian, the word biscotto refers to any cookie or cracker, just as does the British use of the word "biscuit". or our "cookie" except of course without the crunchiness. In North America, the term "biscotti", used as a singular, refers only to the specific Italian cookie known in Italy as Cantuccio, plural Cantucci, which were made with flour, sugar, eggs, almonds or pine nuts. Their oblong-shaped, dryness and crunchiness made them perfect for their traditional use of dipping in Vin Santo, an Italian dessert wine, and now more commonly in coffee. Black Bottom Biscotti went a step further by adding dried cranberries, blueberries & cherries, chocolate chips, peanut butter, sprinkles, bacon, rosemary & then chocolated the bottom. Now it's ready for dipping.

I remember as a child how I use to love sprinkles on top of my ice cream, vanilla ice cream in particular. Sprinkles on top of cookies was also another favorite and of course who doesn't like sprinkles in and on birthday cake?! Now we have taken those same sprinkles that top ice cream, cookies and cakes and put them in biscotti!
