is plural for biscotto. Originating from the Latin word biscoctus, meaning "twice-cooked" it characterised oven-baked goods that were baked twice, which made them very dry thereby making them non perishable and  particularly useful during long journeys and wars. In modern Italian, the word biscotto refers to any cookie or cracker, just as does the British use of the word "biscuit"....

The first biscotti I made was Cranberry Pistachio.  You see, I'm a berry and nut fanatic. My kids joke that if I could find a way to put nuts in water I would (at least I think they're joking).
